Vinification: The first third of the crop was picked and hung on trellis in the sun for 9 days to gain sugar levels. The second third was picked and combined with the first third to ferment on skins for 7 days with daily punchedowns. The third pick was the latest in AmByth history on October 30th and fermented whole cluster for 7 days and was then blended with the first two thirds. Transferred to two neutral oak barrels for 17 months. Racked twice before bottling on descending moons. Ingredients: Biodynamic Grapes.

Tasting Notes: Not sure why you don’t see more 100% Counoise, its such a striking flavorful variety. Plum, tomato and white pepper give it a seemingly spicy bite. Perfect with butter, fatty olive oil dishes or soft cheeses.
